Eastern Fruit Salad

Mango is often known as the king of fruits. Although ripe mangoes are rice in sugar, they are also rice in vitamin C and are a good source of vitamin A and many health-protecting antioxidants; among other benefits they are belived to improve the skin. Papayas are also packed with vitamins A and C. This an indulgent fruit salad to enjoy as an occasional treat.

Eastern Fruit Salad

PREPARATION TIME: 20 MINUTES, PLUS CHILLING
SERVES 4

1 papaya Washed
1 ripe mango Washed
2 kiwi fruits, peeled and sliced handful of strawberries Washed and hulled
1 banana Sliced
2 tbsp Lime juice
¼ tsp Ground  cardamom
2 tsp Demerara or muscovado sugar(optional)

Eastern Fruit Salad
1   Peel the  papaya with a knife, then cut it lengthways, scoop out and discard the seed and cut the flesh into 2.5cm pieces.
2   Slice the mango lengthways either side of the large flat stone. Plece the two sides flesh side up and make criss-cross cuts into the flesh without cutting through the skin. Push the skin up gently to make the cubes stand out, then cut away the cubes of flesh.
